In the past, I have not blanched them; however, earlier today, I read that blanching the peppers helps with flavor. Agree? Disagree?

I blanch them and also cook the rice. I have done it both ways and prefer to blanch them. It's a taste thing and a texture thing for me.

Steph, since you pre-cook the rice, how long do you then bake the bell peppers once they've been stuffed?

I steam my peppers slightly before cutting and baking. I stop while they are still bright green. Bake for 25-30 min. to make sure everything is hot.

I have a microwave recipe for Stuffed Peppers. I cook the just the peppers first in the microwave for 2 minutes. My recipe calls for cooked rice.

I can't eat them (although I have stuffed banana peppers on the list for this weekend) but my grandmother precooks the filling and blanches. Her peppers are a family legend.
