My roomate and I both like the convenience of having chicken breast in the freezer, but don't like the kind that is individually pre-frozen. They tend to put sodium and sometimes sugar in it. Well ... this weekend fresh chicken was on sale with no additives. So we both got some while it was on sale. Roomie put 2 in bags, reasoning that this will prevent freezer burn. I, meanwhile, did what my mom taught me with the ones I bought.... freeze them on a cookie sheet, then put in large freezer bags. That way you can get out 1, 3 or however many you need. IQF without the additives. In the spirit of compromise, I only froze them for about 45 minutes before transferring them to the bags, reasoning that this will prevent freezer burn associated with freezing overnight with no protection. I was at the store, so Roomie transferred them. Well ... later on I noticed that the bags were REALLY PACKED (10 per bag) and it seemed like they'd freeze into a huge, frozen lump! Fortunately, even though they'd been in the freezer for hours, they weren't completely frozen. So I divided the 2 bags into 4, reasoning that they won't be a huge, frozen lump. How do you freeze your pork chops, chicken and things like that?

We still do freeze them on waxed paper on a cookie sheet overnight until well frozen. The we transfer them to freezer bags. IMO, 8-10 hours in the freezer will not produce significant burns. But to minimize freezer burns, you should, IMO, seal the meat in air-tight bags.

I put them on a cookie cooling rack instead of a cookie sheet - they seem to come off easier. Stick 'em in the freezer until the outside is "dry" (err, frozen), and stick 'em in freezer bags. I figure if the outside is hard/frozen, they won't stick together. That's when I freeze them individually. Usually I stick the whole styrofoam tray in the freezer. When I want to cook them, I take 'em out in the morning and leave 'em on the counter (watching to make sure they don't get too warm, of course) all day. Any I don't use out of the pack go on the cooling rack in the above manner.

I wrap mine individually in saran wrap and then combine them in one big freezer bag. I also cut some up in chunks and freeze them by 2 or 4 cup servings to use for soup or hot dish.

My mom buys freezer paper and freezes them that way. She's so good at wrapping them up it looks like a butcher did that! LOL My nephew likes chicken legs and usually eats 2 so we freeze them in packs of 2. My niece also likes them but she doesn't come over as often as my nephew cause she is usually in Ballet. If she comes over, we take out 2 packages. My mom and I like chicken breasts. We usually freeze them in packs of 2. Same for dad who likes thighs.

I wrap them in pairs (I normally cook for 2) in Press N Seal, then put them in freezer bags. The Press N Seal lets me seal them practically air free so no freezer burn.

I use the small ziploc vacuum bags and freeze two or three to a bag depending on size.

I cook it first, and then freeze it. Some in breasts, some in tenders/strips, some diced. Then I can take out whatever I need and not have to deal with raw frozen/half thawed chicken. It also doesn't freeze into one big lump that way.
